Falstaff (96)
A creamy nose promises a smooth opening, the scent of sweet-salt, hazelnutty crumble crust is mouth-watering. The palate is taut but tiny bubbles carry bright lemon zestiness to the tastebuds. It is this lemony serenity and clean-cut 2008 character that remains centre-stage throughout, with subtle autolysis in the background. Very elegant and lasting.Inc. GSTSG$899.82 -

This is in a new bottle, like the stout ones used for the rosé and blanc de blancs. This is very structured with a density and richness with hints of strawberry to the apple character. Bubbles turn fine textured at the end. Delicious flavors of biscuits and dried apple in the finish. Special character to this because of the very ripe vintage. Disgorged in November 2021. This is half chardonnay and half pinot noir. This can age well due to the phenolics. Drink or hold.Inc. GSTSG$720.00 -

Fairly pale color. Complex, soil-inflected, smoky nose combines pineapple, peach, apricot, rose petal, cinnamon and mace; reminded me of Condrieu. Fresh and ripe in the mouth, with impressively intense flavors of fruits and spices. Finishes strong and spicy, with a late note of pink peppercorn.Inc. GSTSG$350.46 -

Incredible aromas of apple skin, pie crust, praline and flowers. So young in the nose. Full-bodied with super-fine tannins. It’s tight and refined, yet structured and intense. Coming from three terroirs with chalky soils, the 2017 Champagne Millésime Abyss Brut Zero is always equal parts Pinot Noir, Meunier, and Chardonnay, and following disgorgement, this wine was rested in the ocean off the coast of Brittany for 10 months at 60 meters below the surface. It opens to beautiful aromas of saline layers and fresh croissant, as well as notes of honeydew melon and fresh flowers. One of a handful of single vineyard châteaux in Champagne, now being made by Leclerc-Briant (although they are not owners). Crisp, clean, touches of green apple on the nose but there is weight behind this and it opens to show plenty of quince, hazlenut, biscuit and flaky pastry character, not quite as far as brioche at this point although it will develop over the next few years. The first wine to be released under the new regime, with Hervé Jestin chef de cave, as for Leclerc-Briant (he was in fact already making wine here under the previous owners). Ageing in neutral oak casks, biodynamic viticulture. 2.5ha of vines, 12%abv. Tasted twice, loved it both times, powerful depth of flavour. Brut zero (2g/l dosage), Blanc de Blancs, 100% Grand Cru.Inc. GSTSG$393.40 -

The mousse is so soft and plentiful that the entire thing almost melts away in your mouth. Just an excellent Champagne that has real character, more minerality than fruit, moving towards saffran and quince. A more challenging vintage in Champagne than the 2012, but this has the charm that comes with bottle age, with a grilled almond edge, still with citrus and white flower undertones. Beautiful.
