The 2015 Volnay 1er Cru Les Caillerets, which is made from whole bunch fruit, has a clean and fresh, very pure bouquet that neatly disguises the stem addition. The palate is grippy, very tannic, masculine with a grainy texture, hints of bell pepper towards the huge finish that needs more flesh to balance those stems. In the same fashion as the BBM there are soft notes of wood toast and petrol that set off the ripe and overtly ripe but not really exotic aromas of both white and yellow orchard fruit that flash background spice and citrus nuances. The wood is more prominent on the palate though there is so much concentration and sappy dry extract that the big-bodied flavors should have no difficulty ultimately integrating it. Interestingly, and has been the case in several recent vintages of this wine, it is no less refined than the BBM if a bit more broad-shouldered. Of course, it was just playing a trick on this writer because it has blossomed into one fabulous Vaillons. The palate skips along, fresh and tensile with a keen thread of acidity. I love the tension here that enlivens this Chablis from start to finish and lends the finish real energy and persistence. The 2015 Chablis 1Er Cru Vaillons was difficult to pin down last year from barrel when it trailed behind the other premier crus. Of course, it was just playing a trick on this writer because it has blossomed into one fabulous Vaillons. It is blessed with a pretty, wet limestone-scented bouquet, very open and transparent with a touch of spice developing with aeration. The palate skips along, fresh and tensile with a keen thread of acidity. I love the tension here that enlivens this Chablis from start to finish and lends the finish real energy and persistence. The 2015 Chablis Grand Cru Les Clos has a pleasant peach and nectarine scented bouquet that might not sing of Chablis, but is attractive in a rather obvious way. We found the wines in 2015 very easy and forward to taste, with as much focus on freshness as concentration, so there wasn’t a complete break from the 2014s in that sense. The hope is that as the wines mature they will continue to show the balance and classicism they displayed from the barrel. Our expectation is that they will do so and the best wines will live for a very long time with a genuinely satisfying pattern of maturation throughout their life.
