Pauillac
Welcome to the remarkable world of Pauillac, an appellation that stands as a testament to the grandeur and finesse of Bordeaux wines.
Pauillac is home to some of the most celebrated vineyards in Bordeaux, renowned for their impeccable craftsmanship and the sheer magnificence of their wines. At the pinnacle of this appellation lies the iconic Château Lafite Rothschild, a legendary estate that has captivated wine enthusiasts for centuries. Its wines, characterized by their aristocratic finesse, layers of complexity, and remarkable age-worthiness, have become the benchmark for excellence.
Another exceptional vineyard in Pauillac is Château Latour, revered for its consistency in producing wines of extraordinary depth, intensity, and longevity. With its unrivaled pedigree and unparalleled reputation, Château Latour stands as a symbol of Pauillac's winemaking heritage. Château Mouton Rothschild, known for its opulent and opulent wines, delights with its richness, elegance, and artful blending.
Other distinguished vineyards in Pauillac include Pichon Baron, recognized for its precision and structure, and Pichon Lalande, admired for its finesse and feminine charm. Pontet-Canet, with its biodynamic practices and uncompromising commitment to quality, produces wines of immense power, depth, and complexity.
The terroir of Pauillac, with its gravelly and well-draining soils, coupled with the influence of the Gironde estuary, provides ideal conditions for Cabernet Sauvignon, the dominant grape variety in the region. Pauillac wines exhibit a captivating blend of blackcurrant, cassis, cedar, graphite, and hints of cigar box, framed by firm yet refined tannins and vibrant acidity. They possess a remarkable structure, balance, and potential for long-term aging.

Deep plum in colour, holding its Pauillac character perfectly at 25 years old, opening up to show cedar, pencil shavings, tobacco, graphite, cassis and touches of raspberry purée. This is very much in the drinking window, with waves of camphor, charcoal, woodsmoke and tobacco adding complexity and interest. 2% Petit Verdot completes the blend.Inc. GSTSG$3,082.48 -

Dark ruby-red. Ripe blackcurrant aromas and flavors are lifted by pungent graphite, cedar and mineral notes. Balanced, pure and smooth in the mouth, with excellent perfume and precision. Finishes long and pure, with lingering cassis and leather notes. This is another Lynch-Bages that has picked up volume and flesh from bottle aging. It's a very classic Pauillac and a wine that can still improve with additional cellaring.Inc. GSTSG$2,249.37 -

(73% cabernet sauvignon, 15% merlot, 10% cabernet franc and 2% petit verdot; 5.11 g/ltotal acidity; 13.2% alcohol): Dark ruby-red with a hint of garnet at the rim. Crème de cassis complemented by floral, tobacco and incense notes on the brightly aromatic nose. Very well balanced, clean, and juicy, with good inner-mouth perfume and energy to the dark fruit, cedar, herb and graphite flavors. The finish features mounting tannins that teeter on the brink of drying. This seems to have picked up some flesh and volume with bottle age, but I hope the fruit outlives the tannins. It's a lovely wine that lacks only the power of the best vintages.Inc. GSTSG$4,181.89 -

From a clay and gravel plateau three miles east of Lynch-Bages, this is a blend of sauvignon blanc, semillon and muscadelle planted in 1988. A hot July and a cool, dry August produced this substantial wine with freshness that keeps it sleek and creamy rather than heavy. With long exposure to air it reveals layers of flavor, from mineral to beeswax, preserved lemon peel and lemon meringue. It feels grand, the vinous equivalent of a classic Bentley.Inc.
