Let the aromatics slowly unfurl out of the glass, really give it time. Crushed raspberries and tobacco, fresh flowers, salty crackers, oyster shell. The weight, the texture, the acidity are all in balance, playing off each other, and this is just a wonderful wine that stops you in your tracks. Located at 1,450m, from a 1.4ha limestone plot, particularly rich in microorganisms (as we learnt through their brilliant recent terroir studies). It’s a place where phenolic ripeness happens slowly, and the complexity builds as a result. Fascinating nose of white lavender, lemon, pineapple, green apple, thyme, rosemary, sourdough, almond and oyster shell. It’s medium-bodied with vibrant acidity and a tense, spicy palate. The 2013 Brut Grand Cru Aÿ Argonne is the latest in a series of superb releases from Giraud. Unwinding in the glass with notes of buttered toast, crisp yellow orchard fruit, honeycomb, warm spices and ripe stone fruits, it's full-bodied, deep and vinous, with a layered core of concentrated fruit, incisive acids and an elegant pearly mousse. The Mourvèdre-dominated 2017 l’Ancely is a rockingly good wine, and there aren’t many better Mourvèdre out there. Lots of blueberry and wild strawberry fruits as well as notes of spiced meats, herbes de Provence, and peppery garrigue notes all soar from the glass of this full-bodied red. Offering a layered, seamless texture, good acidity, and enough structure to warrant 2-4 years of bottle age, it’s going to have 15+ years of prime drinking from cold cellars.Inc. GSTSG$474.90 -

The 2021 Coche has to be one of the finest white wines from Portugal that I've tasted. It was produced with grapes grown at 600 meters in altitude, from very old vineyards with the right field blend with a majority of Rabigato but also other local varieties. It has a fine and elegant reductive character with flinty notes, hints of smoke and dry herbs. This is sharp and super tasty, with an almost salty twist in the finish. It fermented and matured in French oak barrels (mostly 228-liter ones) for one year. It's serious, nuanced, a little austere and vertical, with a dry finish, a chalky sensation and very good persistence. It has 11.8% alcohol, a pH of 3.26 and 5.8 grams of acidity. I've drunk all the vintages of Coche since the first year (2010), and this is the finest to date. Bravo. 9,500 bottles produced. It was bottled in January 2023.Inc. GSTSG$517.49 -

A wine to convince you of the quality and ripeness of Cabernet Sauvignon in Pauillac in this 2023 vintage, showcasing superbly supple tannins, great balance, depth and savoury blue and black fruit character, bitter cocoa bean, freshly cut herbs, black tea, fennel, all vivid and with purity of character. There is density here but it is not overt, with heightened raspberry leaf, peony and violet aromatics. Vinified in the newly-completed section of the cellars, in egg-shaped wooden vats and sunken qveri-style clay vats. 50% new oak for ageing, with 35% amphora and 15% one year old barrels. One of the wines of the vintage. New lighter bottle as of the 2022 around 490g, down from 815g in the past, 30 tonnes of CO2 saved just in terms of production. The 2013 Salon is a huge wine. Dense and explosive, the 2013 possesses almost shocking textural richness for a young Salon. If offers a perfect example of the vintage in the Côtes des Blancs, a year in which ripeness and acids were both elevated. Lemon confit, marzipan, white flowers, mint and white pepper explode onto the palate. Bright saline notes pull it all back together on the finish. Dosage is 4.5 grams per liter.Inc. GSTSG$4,930.90 -

The 2012 Extra-Brut Les Blanc de Blancs Blanches Voies is stellar. It offers tons of brilliance and energy, especially for a year in which most wines are quite a bit more radiant. It's a style that works quite well here, though. Crushed rocks, white pepper, mint and lemon peel all build as the 2012 shows off its alluring, saline-infused personality.
