The 2017 Roc de Cambes is even better from bottle than it was from barrel. Rich, dense and explosive, with tremendous power the 2017 is positively stellar from the very first taste. Macerated dark cherries, sage, spice, star anise, orange zest, mint and new leather give the 2017 an exotic, racy feel that is hard to fully describe. In the glass, the 2017 possesses off the charts aromatic intensity and tons of pure fruit richness, while the 100% new oak is barely perceptible. A wine I was able to taste on multiple occasions, the 2015 Troplong Mondot is a tour de force that readers need to snatch up. This cuvee comes from the cool, clay and limestone soils on the upper plateau (it’s the highest point in the appellation) and is a blend of 92% Merlot, 6% Cabernet Sauvignon and 2% Cabernet Franc, harvest between September 30th and October 21st, that was brought up in 85% new French oak. Sporting a deep, inky color as well as a sensational bouquet of creme de cassis, blackberry, toasted spice, licorice and spring flowers, it’s another huge wine from this estate that has perfect balance between its fruit, oak and tannin, a stacked mid-palate, and an incredible finish. I wrote "crazy good" more than once in my notes. It has enough fruit and texture to drink nicely even today, yet needs 4-5 years of cellaring and will keep for two to three decades. The 2014 Brut Coeur de Cuvée impresses with its density and overall energy. Apricot, baked apple tart, spice, chamomile and lightly honeyed accents all meld together. The 2014 is deep and beautifully centered, with tons of poise and impeccable balance. It's a pretty big wine by Vilmart standards, and yet all the elements are so well put together. William Fevre own 46ha of AP Chablis but there was lots of frost damage in 2021 - the yield was just 18hl/ha! Lovely floral notes here, very precise and focussed. This is already appealing although the acidity is certainly evident. Lingering spice notes on the finish. From a tank sample, with bottling due in November. From old vines of around 60-65 years on average. Fresh pale colour with a light green tint. Clear pale colour, slightly smoky, good volume of fruit, the smoke coming out in the mouth as reduction on the seashells. Solid weight here, plus the minerals as well. Cool and strikingly elegant aromas include those of quinine, white peach, spice and an abundance of classic Chablis notes. The dense yet wonderfully refined medium-weight flavors brim with dry extract on the gorgeously long, balanced and highly complex finale. This is extremely stylish and very promising.
