Composed of 74% Merlot and 26% Cabernet Franc and aged for 18 months in 70% new French barriques, the 2016 Canon is medium to deep garnet-purple in color, and—WOW—it opens with the most stunning perfume of violets, red roses and kirsch, giving way to a core of black cherry preserves, chocolate box, licorice, warm plums and Chinese five spice plus an earthy waft of underbrush. Medium to full-bodied, the palate is completely filled with expressive, perfumed black berry layers accented by lively red fruits and exotic spices, supported by impressively fine-grained tannins and fantastic tension, finishing very long with jaw-dropping energy. Tasted three times, I had one opportunity to taste the 2015 and 2016 Canon side by side. While I love the bold, rich, seductive nature of the 2015, this 2016 kicks it up a notch in terms of polish, precision, depth and persistence. Just about as close to perfection as a wine can get, the 2016 Cabernet Sauvignon from winemaker Chris Carpenter comes mostly from mountain vineyards and is 89% Cabernet Sauvignon and 11% Merlot. This full-bodied, rounded, thrillingly textured beauty boasts a saturated purple color as well as a huge nose of crème de cassis, new saddle leather, barbecue smoke, and scorched earth. It has perfect integration of its fruit, tannins, acidity, and oak, carries remarkable power and intensity, yet still glides over the palate with no heaviness or sensation of weight. The perfect Mediterranean vintage produced an outstanding Garnacha. The 2020 El Molar fermented with 35% full clusters and matured in a combination of 500-liter barrels and 5,000-liter foudres for one year. The wine is very young and tender; it feels more delicate despite having a little more alcohol than the 2019 (it's 15%) and with a slightly lower pH (3.49). It's super aromatic, extroverted and expressive, floral, elegant and complex. There is great balance, and the wine feels fresher and less ripe; it's refreshing and has a core of minerality and super fine tannins with pungent flavors. There is precision, elegance and balance, the three words that define the vintage. All the wines are very good value, but this is a steal. 40,000 bottles were filled in March 2022.Inc. GSTSG$270.17 -

Castellare's I Sodi di San Niccolò is the single most overlooked high-end wine in Tuscany today. The 2016 picks up where the 2015 left off. A rush of inky dark fruit, lavender, spice, licorice, gravel, blueberry and menthol builds as the 2016 shows off its exceptional balance and pedigree. Readers will have to be patient, as the 2016 needs a few years in bottle to fully come together. Even so, the 2016 has been nothing less than spectacular on the two occasions I have tasted it so far. Another perfect wine in the lineup is the 2020 Ermitage L'Ermite Blanc, and white wine simply doesn’t get any better. I’ve never found another white that conveys a sense minerality and liquid rock like this cuvée, and the 2020 offers a piercing bouquet of white currants, quince, honeyed flowers, charcoal, and scorched earth, with celery seed and wild fennel notes developing with air. A huge, rich, massive wine, it has awesome purity and precision and a great finish. It’s one of my favorite white wines in the world. This demands 3-5 years of bottle age and will have 20, 30, if not 40 years of longevity, although I find estimating the evolution of Hermitage Blanc one of the most challenging and difficult parts of the job.Inc. I was blown away by the 2020 Ermitage Le Méal Blanc, which is certainly the finest vintage of this cuvée I’ve tasted. From the pure south-facing Méal lieu-dit (which is the warmest terroir on Hermitage), it was vinified and aged 70% demi-muids (10% new) and 30% in stainless steel. Straight-up heavenly notes of white currants, powdered rock, celery seed, honeysuckle, and toasted almonds all define the bouquet, and it’s full-bodied and concentrated on the palate, with that rare mix of richness and freshness. Hermitage Blanc doesn’t get any better. I love this today, yet it will certainly benefit from a year or two of bottle age, drink well for 3-5 years, at which point, it’s probably best to wait until a solid 15 years after the vintage.Inc. The wine is a blend of 55% Grenache, 30% Mourvedre, and 10% Syrah with the remaining 5% consisting of various, allowable grape varieties. The grapes are as always 100% destemmed. I was blown away by the 2020 Ermitage Le Méal Blanc, which is certainly the finest vintage of this cuvée I’ve tasted. From the pure south-facing Méal lieu-dit (which is the warmest terroir on Hermitage), it was vinified and aged 70% demi-muids (10% new) and 30% in stainless steel. Straight-up heavenly notes of white currants, powdered rock, celery seed, honeysuckle, and toasted almonds all define the bouquet, and it’s full-bodied and concentrated on the palate, with that rare mix of richness and freshness. Hermitage Blanc doesn’t get any better. I love this today, yet it will certainly benefit from a year or two of bottle age, drink well for 3-5 years, at which point, it’s probably best to wait until a solid 15 years after the vintage.In BondSG$1,890.00 -

Tasted on four separate occasions, the 2016 Château Clinet is another brilliant wine from this estate. Showing slightly more freshness and purity than the 2015, its saturated purple color is followed by a thrilling array of crème de cassis, graphite, ground herbs, and a terrific sense of minerality. Deep, full-bodied, with building tannins, and a magical sense of purity and elegance paired with real density and depth, it needs short term cellaring and will keep for three decades.Inc. Medium to deep garnet-purple in color, the 2016 Clos de Sarpe (composed of 85% Merlot and 15% Cabernet Franc) is a little closed to begin, opening out to reveal provocative Black Forest cake, Chinese five spice and cigar box notes with nuances of sandalwood, kirsch, rose hip tea and pencil shavings. Another perfect wine from this brilliant estate is the 2016 Châteauneuf-du-Pape, which matches the otherworldly 2007. A classic blend of 60% Grenache, 30% Mourvèdre and 10% Syrah brought up all in old foudre, this beauty's deep purple color is followed by a mammoth bouquet of kirsch liqueur, black currants, blueberries, Asian spices, and garrigue. Full-bodied, concentrated, and powerful, it nevertheless is as graceful as a ballerina on the palate and has ultra-fine tannins, a silky, seamless texture, and a finish that just won't quit. Flowers are the first thing you notice before discovering all the spice, cloves, kirsch, and dark cherries on the nose. On the palate, the wine is silky, elegant, fresh, supple, and refined. The kirsch shows a beautiful purity and spicy character, along with its refined tannins and peppery strawberries that kick in at the end of the finish. The wine is a blend of 55% Grenache, 30% Mourvedre, and 10% Syrah with the remaining 5% consisting of various, allowable grape varieties. The grapes are as always 100% destemmed. Sourced from the lieux-dits of Guigasse and Pignan, the nose delivers the essence of sandy-soil Grenache, with notes of rose petals, lavender, thyme, cherries and raspberries.
