This is powerful and blows away much of the competition with its depth and layers. This needs you to pull up a chair, take a beat, and let the flavours unroll. There is so much density to the blueberry, bilberry and smoked raspberry fruits that they start out knitted down, then as the oxygen opens them up the body of the wine widens and becomes fleshier and creamier, adding chocolate and mocha notes. The limestone scrape is there in spades through the finish, and this is a cleverly constructed wine. As ever Ausone is just a masterclass in how to take apart and then put back together a terroir. Field blend of Chiavennasca (Nebbiolo), Rossola, Pignola, Brugnola and Negrera, all rare local varieties. Fermented in stainless steel with indigenous yeast without added SO2 (which is added only at bottling). Total of 20 days on the skins. Part of the wine was aged on the fine lees in stainless steel and part in concrete. ‘We macerate for a shorter time in warm years, but longer in cooler years to get softer tannins. In warmer years there is just no need and with longer maceration in warm years you lose freshness.’ Cask sample 1: Youthful mid ruby. Pure and focused red-fruit nose with a little lift and a hint of raw meat. Succulent and a little vibrant on the attack. Savoury, sappy, red-fruit finish with soft, coating tannins. Gorgeously aromatic and concentrated nose, rich with wild flowers and bramble fruits. Lovely cool blue fruits on the palate, blueberries, plums and black cherries with lashings of graphite, slate and liquorice giving a real spicy menthol mineral tone to the palate. Such complexity with poise and polish. Youthful for sure, but this will be excellent. The texture is so attractive and likeable. The finest wine I've tasted from this estate, the 2020 Château Bellefont-Belcier is an incredibly gorgeous blend of 70% Merlot, 25% Cabernet Franc, and 5% Cabernet Sauvignon. Deep ruby/purple-hued, it offers a great nose of cassis, ripe black cherries, camphor, dried flowers, cedar, and forest floor. Bringing gorgeous richness, it nevertheless stays flawlessly balanced, with ultra-fine tannins and a great finish. The purity of fruit here is just about off the charts. While it already offers pleasure, it's going to benefit from short-term cellaring and have 20-25 years of prime drinking. This estate uses a five-day cold soak and fermentation, all in concrete, spanning 25 days. Malolactic fermentation occurs in barrel (four months on lees), and the wine spends 18 months in 30% new French oak, with the balance in once- and twice-used barrels. The smallest of the Perse estates, this tiny property situated on pure limestone produces a wine made from a blend of 90% Merlot and the rest equal parts Cabernet Franc and Cabernet Sauvignon. One of the superstars of this vintage, the 2012 is opaque purple and exhibits tremendous concentration and richness, a full-bodied mouthfeel, and a layered texture that builds incrementally without any heaviness or cloying characteristics. A family-run Champagne house with a history dating back to 1878, many of the grapes grown by Maison Bénard Pitois are bought by Bollinger but they keep selected parcels from their 1er Cru vines in Mareuil-sur-Aÿ to create this excellent value Brut Réserve and their other releases.
 Made from a blend of 60% Pinot and 40% Chardonnay, it was aged for 30 months on lees, double the usual Non-Vintage ageing period of 15 months, and elegant brioche and almond complexity really shines through. It was also partly aged in wooden barrels, which has given it the richness..
