Jeb Dunnuck (100)Just a powerhouse of a wine that does everything right, the 2000 Château Pavie is drinking incredibly well today, offering huge blackcurrant and chocolatey darker berry fruits as well as loads of truffly earth, tobacco, and spice. Full-bodied, deep, and concentrated on the palate, it stays flawlessly balanced, and while I suspect the acidity is quite low, it has an incredible sense of freshness and a weightless texture. Fully mature, yet in the early part of its drink window, it has another two decades or prime drinking ahead of it. |

Jancis Robinson (17)Very dark crimson – looks much bluer than the 1996. Still bluer than the 2004. Savoury, complex, really rather gorgeous nose even if far from the first flush of youth. Sumptuous nose even if on the palate it’s more austere than the nose suggests. Quite grainy tannins on the finish but lovely balance. Very fresh. |

Vinous (95+)Wonderfully pure, high-pitched nose melds quinine, pineapple, crushed stone, orange zest, violet and lavender; smells like a current release. Densely packed and very rich, with seamless flavors of crushed wet stone, lichee and grapefruit complicated by notes of baked bread and honey. This is very much like licking a rock, and yet there are complicating hints of tropical fruits here too. Wonderfully classy, pure wine with a tactile, classy, very subtle and long finish. Still a baby, and compellingly vibrant for a wine from the 2000 vintage. The driest wine in this vertical tasting, at just 1.3 grams per liter of residual sugar. |
