Thistledown, a tiny-production winery based in South Australia's Adelaide Hills, is a producer of premium quality, high ambition and a strong sense of direction. Headed up by two British-based Masters of Wine, Giles Cooke and Fergal Tynan, they bonded over their love of Australian wine and eventually decided to start a winery together. Seeking the best cooler climate, old-vine vineyards they could find in Australia, they founded Thistledown in 2010. Along with consultant Peter Leske, the two MWs craft some of the most profound terroir-focused wines in the country.
