The fruit is a little darker, more raspberry than cherry, and there will soon be the lightest of chocolate notes. At this level the whole bunch clouds just add a nuance. There is a little bit of the singed rock but it barely competes with the exceptional fine red cherry and raspberry bouquet. This could be his best Brûlées yet and that is really saying a very great deal. Sensational texture, unexaggerated fruit, just joyous and gorgeous. Grace personified.
