The Zýmè 2020 Kairós takes an everything-but-the-kitchen-sink approach and ultimately reveals full-bodied results with blackberry preserves and juniper berry. It shows good freshness and integrated tannins. You can't really pin this wine to territory or grape, but it is a confident example of a full-bodied winemaking style from innovative vintner Celestino Gaspari. This is a release of 45,000 bottles.
