True to style, it also incorporates approximately 10% of already-bottled Champagnes that have been disgorged and reintegrated into tank. Disgorged à la volée in July 2025, it bursts from the glass with scents of nashi pear, lemon oil and green apple, mingling with pastry nuances and framed by youthful reduction. The texture of the mousse is creamy, and the feel is supple and silky without any heaviness. The base wines are one-third each from 2017, 2018 and 2019. The 2020 Monthélie Les Champs Fulliot 1er Cru comes from organic purchased fruit. There is touch of a reduction on the nose, touches of cherry liqueur and strawberry, the 30% new oak nicely integrated.
