Aromes de Pavie comes from new parcels purchased in 2017 (on top of the plateau). As from 2018, it is no longer a second wine, per se, as these are dedicated parcels for Aromes, giving it its own identity. The 2019 Aromes de Pavie is composed of 65% Merlot, 18% Cabernet Franc, and 17% Cabernet Sauvignon. Deep garnet-purple colored, it strides out confidently with notes of baked black plums, blackberry preserves, and chocolate-covered cherries, leading to hints of pencil lead, cardamom, and rose oil. Full-bodied, voluptuous, and super-plush, the palate is chock full of juicy black fruits with a spicy undercurrent and plush tannins, finishing with a refreshing lift and lots of mineral sparks. This impressive wine should age very well.

Textured, vibrant and built for at least 10 more years.

Coming all from limestone soils and equal parts Merlot and Cabernet Franc that was brought up in 50% new French oak, the 2021 Aromes De Pavie sports a solid ruby/plum hue as well as a medium to full-bodied, deep, seamless profile in its riper, mostly red fruits, crushed stone, graphite, and floral-laced aromas and flavors. With beautifully integrated oak, ripe, velvety tannins, and a brilliant finish, this is a legit, serious, gorgeous wine. It's probably the best second wine in the vintage. Drink bottles over the coming 15 years.
