Champagne
Champagne, the epitome of elegance and celebration, is widely regarded as the pinnacle of sparkling wines. As one of the most prestigious wine regions in the world, Champagne has captured the hearts of wine enthusiasts and connoisseurs with its exceptional quality, refined craftsmanship, and iconic vineyards.
Historically, Champagne has been dominated by some world-acclaimed Champagne House, which source grapes and harvest from Champagne growers. These famous Grandes Marques include Louis Roederer (Cristal), Dom Pérignon, Krug, Moët & Chandon, Veuve Clicquot, and Bollinger, all of them are revered for their notable names that display unrivalled winemaking prestige and pedigree.
In the recent decade, the emerging Grower Champagne trend in Champagne is shaking up the industry by challenging the dominance of the big Champagne houses. These small-scale producers, also known as "Récoltant-Manipulant" or RM, grow their own grapes and produce their own Champagne, showcasing the unique terroir and character of their vineyards. Jacques Selosse, Ulysse Collin, and Champagne Vilmart & Cie are among the most prominent names in this trend, producing some truly artisanal and terroir-driven Champagnes.
Champagne is primarily made from three main grape varieties: Chardonnay, Pinot Noir, and Pinot Meunier. These grapes are carefully selected and blended to create a harmonious and complex flavour profile. Chardonnay contributes elegance, freshness, and finesse, while Pinot Noir adds structure, depth, and fruitiness. Pinot Meunier brings a touch of roundness and vibrancy to the blend.
The region of Champagne is divided into several distinct sub-regions, including Montagne de Reims, Côte des Blancs, and Vallée de la Marne. Each sub-region has its unique terroir, characterized by variations in soil composition and microclimates, which influence the style and character of the wines produced.
Champagne offers various styles, from non-vintage blends to vintage cuvées and prestigious prestige cuvées. While Non-vintage Champagnes typically epitomise the house style, the vintage Champagnes are made from grapes harvested in one particular year (top vintages such as 1996, 2002, 2008 etc), in which these wines showcase the unique characteristics of the specific vintage.
The prestige cuvées, often the flagship wines of the renowned Champagne houses, are the pinnacle of excellence. These exceptional Champagnes are created using the finest grapes, the most meticulous winemaking techniques and often benefit from extended ageing to achieve unparalleled complexity and finesse.
Champagne is synonymous with celebration, elegance, and luxury. Its effervescent charm and timeless appeal have made it the drink of choice for countless special occasions and memorable moments. With its rich history, iconic vineyards, and unrivalled quality, Champagne continues to captivate wine enthusiasts and connoisseurs alike.

Surpassing the 2010, the 2015 Extra-Brut Clos des Goisses is gorgeous, evoking aromas of pear, mirabelle, spices, honey, brioche and perfectly ripe orchard fruits intertwined with delicate notes of iodine. Full-bodied, vinous and concentrated, it's layered and dense with remarkable depth at the core combined with racy acids and a structured, perfectly balanced mid-palate. The 2006 Clos des Goisses Rosé is a deceptively powerful Champagne. Pale in color, as it always is, the 2006 Rosé packs a serious punch. Deep, exquisitely layered and persistent on the palate, the 2006 offers a compelling interplay of power and finesse. The Clos des Goisses Rosé is the same base as the Blanc, with the addition of 9% Pinot vinified with the saignée method (rather than still). This is one of the best versions of the Juste Rosé I have tasted. Dosage is 4.5 grams per liter. Disgorged June 2016.Inc. GSTSG$2,219.76 -

A library release of around 600 bottles from Philipponnat's oenotheque range. Salty aromas on the nose with fresh almonds - you can smell age and richness but the colour is remarkable, not at all deep gold or brown more bright gold, this smells older than it looks. Lots of pear, ripe and fresh with vanilla, sandalwood, floral scents and softly spiced accents on the nose alongside a faint truffle aroma. The palate is focussed and straight with an iodine, lemon and lime tang in the middle while the edges carry the maturity with smoked meat, cepe, buttery toast, vanilla cream pastry, salt and a touch of exotic fruit. Persistent, intense, complex, rich and so intriguing - a real ride of flavour and texture. Full bottle 1,697 g. From vineyards including the historic plots at Le Léon in Aÿ, complemented by Chardonnay from Le Mesnil-sur-Oger and Oger. The 2009 Extra Brut Blanc de Noirs Les Cintres hails from lieux-dits Les Grands Cintres and Les Petits Cintres in the steep, south-facing part of the Clos des Goisses which is characterized by the thinnest, reddest soils in the vineyard and where the house's oldest vines are planted. Amazingly, the 2009 attained 13.5% alcohol, the highest numbers recorded chez Philipponnat since 1959. Unwinding in the glass with aromas of warm bread, fresh peach, mango and yeast extract, it's full-bodied, thickly textural and vinous, with lively acids—Philipponnat opting to block malolactic fermentation—and a deep, multidimensional core, concluding with a long and powerful finish. This is a broad-shouldered, authoritative wine that may disconcert by virtue of its sheer scale, but it is a potential legend in the making.Inc. GSTSG$489.32 -

This is a broad-shouldered, authoritative wine that may disconcert by virtue of its sheer scale, but it is a potential legend in the making. In BondSG$441.00 -

(65% Pinot Noir, 30% Chardonnay and 5% Pinot Meunier; no dosage, as the name indicates; disgorged in June, 2014): Light yellow. High-pitched and pure on the nose, offering intensely mineral citrus fruit and floral scents and a hint of ginger. Dry and incisive on the palate, delivering bitter lemon pith and pear skin flavors and a touch of honeysuckle. Closes taut, dry and very long, with excellent clarity and repeating floral character. This bottling was made entirely from 2010 wines. In BondSG$357.00 -

Sourced from 70-year-old Pinot Noir vines planted on a north-facing mid-slope site, the NV Extra-Brut Les Grandes Côtes is composed equally of the 2020 vintage and reserve wines drawn from the 2011–2019 perpetual reserve. The bouquet is profound, redolent of dark cherry, orange zest, pear, pastry and peeled almond. Full-bodied yet impeccably proportioned, it is at once ample and elegantly muscular, with a fleshy fruit core, bright structuring acidity and a precise, delicately perfumed and enduring finish. For those acquainted with the topography of the Côte des Bar, this parcel lies immediately adjacent to Cédric Bouchard’s Le Creux d’Enfer. In BondSG$314.00
