Having regaled English sparkling wine to Antonio the previous day, it was only right that we chose a bottle of Non-Vintage Wiston Brut to commence. Wiston is one of the UK’s best producers and their sparklers genuinely give champagne a run for their money (and I write that as a person that criticized the category for many years). This equal blend of Pinot Noir, Pinot Meunier and Chardonnay was on form, perhaps even better than the bottle I tasted last year, brimming over with Granny Smith apples and a welcome twist of bitter lemon on the finish.

The NV Brut is a blend of one-third each Chardonnay, Pinot Noir and Pinot Meunier that is matured entirely in stainless steel. It has a fresh cooking apple bouquet with light granitic notes, but unlike the Blanc de Blancs from Wiston, I would have liked more tension and energy conveyed here. The palate is better than the aromatics: crisp acidity with touches of spice, citrus peel and a pleasing saline finish. It improves as it opens in the glass.

Owned by the Goring family since 1743, the Wiston Estate has recently emerged as one of the premier producers of sparkling wine in England, arriving onto the scene during a surge in interest and investment in high-quality wine in the country. With 16 acres under vine in the chalky soils of the South Downs they are a small-batch producer and easily give many a great Champagne grower a run for their money.
